Five for Friday, January 22: Small Batch Edition

Today’s Five for Friday features a whole bunch of small-batch recipes. These are perfect for one or two people–sometimes with a modest quantity of leftovers.

1. I used to make sweet potato and black bean enchiladas for the whole family, but this small-batch recipe looks like a terrific guide to making the same thing on a smaller scale. (I hate ending up with tons of leftover enchilada filling.)

2. How cute are these Individual Pineapple Upside-Down Cakes?

3. Of course, sometimes you just want to keep it simple–sometimes, a girl just needs a cupcake. And a recipe that makes only four of them lets that girl eat her cake and have some, too. (But not too much.)

4. Oatmeal Scotchies are my favorite cookies. Make them 8 at a time and you don’t have to worry about getting sick of them before they’re gone.

5. And finally, this recipe for a Cranberry Moscow Mule sounds delightfully refreshing as I welcome some end-of-week relaxation.
